Budget Cooking – Turn 6 Rissoles into 24
Budget cooking for a family isn’t always easy. The pressure of a busy life often catches up with us. I forget the easy tricks. I often over complicate our shopping trips buying too little of one thing and too much of another.
The average cost for a decent quality tray of mince is around $12 for 500gm unless it’s on special. If you purchase organic/macro brands it can cost even more. Saving money on groceries is one of the first things we look at during the budget process.
One rule of thumb I have been trying to stick to lately is- ALWAYS have vegetable’s handy – even if it’s just a couple of potatoes or a sweet potato. Why? If you’re low on food and you want to avoid another shop until pay-day you can easily whip up something with a little bit of mince.
Take these Steggles Turkey rissoles, for example, I snatched up for a bargain price of $1.99 for 6. Knowing 6 rissoles won’t feed my hungry little family I mixed the mince with 2 cups of finely grated sweet potato – making 12 Rissoles.
You can use any filling as well as more bread crumbs and egg. This is just one of the cheap easy meals I prepare throughout the week.
Budget cooking often means getting the most out of every bit of food I buy and if consistent the savings at the end of the week are very rewarding. Mixing vegetables with your mince is also a fantastic way t encourage kids to eat food they would usually complain about.
How To Make 24 Rissoles
- 1 Cup of grated Zucchini
- 2 Cups of Sweet potato
- 1/2 Cup Bread Crumbs.
They won’t be heavy on the meat but you have an even healthier version of a rissole. Cook some Rice on the side and you have a very cheap easy meal. If you want to make them extra tasty cook the grated veg in some garlic first, leave it to the side to cool and then mix it into your mince.
- 6 Seasoned Turkey Rissoles [or 400g Seasoned Turkey Mince]
- 2 x Cups of Finely Grated Sweet Potato
- 1x Cup Finely Grated Zucchini
- 1x Cup Bread Crumb or Rice Flakes
- Take grated vegetables & bread crumbs, add to rissoles
- Re-form Turkey Rissoles into 24 new Rissoles
- Cook on high until sealed then cook on medium for a further 3-4 Minutes or until cooked through
- Serve on Burgers or with a side of Rice/salad
